Scott and I are staying in Jackson for Thanksgiving this year to have lunch with his family! (Remember last year we were in
Batesville, and the DAY AFTER Thanksgiving was when I killed my big buck!!)
Anyway, I'm in charge of bringing a desert tomorrow for our gathering. After looking through all my recipes I decided on one of my mom's recipe's...which happens to be one of my favorites! I've actually never made it myself...until tonight! Its a perfect Thanksgiving or Christmas desert!! I'll share it with you along with some pictures along the way....
Beat 3 eggs with a mixer.

Add 1 cup of sugar and beat again.

Fold in 2/3 cup pumpkin (from a can). Fold with a spoon until blended.

Then add:
- 1 teaspoon lemon juice
- 1 teaspoon baking powder
- 2 teaspoons pumpkin spice
- 3/4 cups plain flour (sifted)
Again, mix with mixer.

Preheat oven to 325 degrees. Spray Pam onto low-sided rectangle cookie sheet. (Spray cookie sheet several times to ensure bread will not stick to pan). Pour mixture onto cookie sheet and spread to cover entire pan. Sprinkle 1/2 cup of chopped pecans on top.
Bake for 15 minutes or until bread pulls away from cookie sheet.

While bread is baking, take a large dish cloth and lay out smooth onto counter. Cover dish cloth with powdered sugar. As soon as bread is ready, dump out on dish cloth and roll up tightly. Let completely cool for about an hour.

While cooling, prepare filling. Mix the following ingredients until smooth:
- 1- 8 oz. cream cheese (room temperature)
- 4 tablespoons butter
- 1 cup powdered sugar (sifted)
- 1 teaspoon vanilla
After bread is cool, carefully unroll.

Spread filling evenly over bread.

As tightly as possible, roll bread back up. Be careful not to cause cracks in bread.

Trim off two edges to create a smooth finish. Wrap in saran wrap and refrigerate. Slice from end to serve!!

When Mom makes it, its much prettier!! But I guess I did OK for my first time!! For those of you that try this recipe, try to roll it as tight as you can (but its tricky because if you roll it too tight - it cracks!) I guess practice makes perfect!!!
I hope its a hit tomorrow!!!!
